
Hamburger Veggie Soup (S) for Instant Pot
This is a family fave! It's great as leftovers and it freezes well. (who am I kidding? never enough left to freeze!) Sub other veggies if your family doesn't like something listed ... just remember that adding any kind of potatoes/corn/peas will make it a THM crossover.

Ingredients
- 1 lb. ground beef
- 4 c. beef broth
- 1 large onion diced
- 1 zucchini diced
- 1 yellow squash diced
- 1/2 c. carrots chopped
- 8 oz. mushrooms chopped
- 1 red pepper chopped
- 1 yellow pepper chopped
- 1 c. green beans diced
- 2 tsp. THM Mineral Salt
- 1 tsp. black pepper
- 1 tsp. onion powder
- 1 tsp. garlic powder
Instructions
- Place ground beef into insert bowl of the Instant Pot, and brown on the saute setting until browned.
- Add the broth, veggies and seasonings.
- Stir. Cook on the Soup setting for 30 minutes, then do a QPR (quick pressure release) and removed the lid when safe to do so.
- Serve warm.
