Hamburger Veggie Soup (S) for Instant Pot

This is a family fave! It's great as leftovers and it freezes well. (who am I kidding? never enough left to freeze!) Sub other veggies if your family doesn't like something listed ... just remember that adding any kind of potatoes/corn/peas will make it a THM crossover.

Ingredients
  

  • 1 lb. ground beef
  • 4 c. beef broth
  • 1 large onion diced
  • 1 zucchini diced
  • 1 yellow squash diced
  • 1/2 c. carrots chopped
  • 8 oz. mushrooms chopped
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 1 c. green beans diced
  • 2 tsp. THM Mineral Salt
  • 1 tsp. black pepper
  • 1 tsp. onion powder
  • 1 tsp. garlic powder

Instructions
 

  • Place ground beef into insert bowl of the Instant Pot, and brown on the saute setting until browned.
  • Add the broth, veggies and seasonings.
  • Stir. Cook on the Soup setting for 30 minutes, then do a QPR (quick pressure release) and removed the lid when safe to do so.
  • Serve warm.
