Dreamy Lasagna

Where are all my pasta fans? I see your hands! This recipe is for you! It uses Dreamfield's Lasagna Noodles, which I had to order on Amazon. TOTALLY WORTH IT! If you want to indulge in something that is on-plan yet tastes like it isn't, then you'll want to make this soon. It's a heavy S so don't make it often - just enjoy it when you do! I realize that you can make lasagna with spinach/zucchini/eggplant and it's healthier. But I will argue that this recipe tastes like ooey-gooey-can't-be-healthy-but-it-is, and that you and your family are going to love it!
Pair it with a salad and add some garlic bread for a healthy crossover (XO) for your kids.
This recipe can easily be made into 2 - 9x9" pans; eat one pan now and freeze the other before baking for later. Makes a great dinner to share if you are taking a meal to a family with a new baby or recovering from illness/surgery.

Ingredients
  

  • 12 Dreamfield's Lasagna Noodles
  • 1 lb. ground beef
  • 8 oz. can sliced mushrooms (optional)
  • 1 medium onion, diced
  • 24 oz. spaghetti sauce
  • 16 oz. tomato sauce
  • 1 tsp. Italian seasoning
  • 24 oz. cottage cheese
  • 8 oz. cream cheese, softened
  • 1/4 c. nonfat, plain Greek yogurt
  • 1 egg, beaten
  • 1 tbsp. dried parsley
  • 8 oz. shredded Mozzarella cheese
  • 1/2 c. shredded Asiago cheese (can sub Parmesan)

Instructions
 

  • Preheat oven to 375 degrees. Cook pasta according to directions on box.  Drain and set aside.
    Brown ground beef in a skillet over medium heat with onion.  Drain if needed.  Stir in mushrooms, spaghetti sauce, tomato sauce and Italian seasoning.  Simmer over low heat for 7-10 minutes until sauce begins to thicken.  Remove from heat and set aside.
     
    In a medium bowl, combine cottage cheese, cream cheese,Greek yogurt, egg and parsley.  Set aside.
     
    Lightly grease a 9”x13” pan with coconut or avocado oil baking spray.  Spread 1 cup of meat sauce in the bottom of the pan.  Top with 6 lasagna noodles – overlap to cover.
     
    Top noodles with half of the cottage cheese mixture, then top with 1/3 of Mozzarella cheese.  Spoon half of the meat sauce over the cheese; sprinkle with ¼ c. of Asiago cheese.
     
    Repeat previous layering – starting with 6 lasagna noodles and ending with remaining meat sauce and Asiago cheese.  Top with remaining Mozzarella cheese.  Cover pan with foil.
     
    Bake lasagna covered for 30 minutes.  Remove foil and bake uncovered for an additional 30 minutes  or until cheese is melted and bubbly.  Let sit for 15 minutes before serving/cutting.  Enjoy!
